Super Satay Sauce

Super Satay can be Souped Up Satay!

Ingredients

  • 1 tablespoon of oil

  • An onion, halved and sliced

  • 3 large cloves of garlic, crushed

  • Thumb sized piece of ginger or 5 slices

  • ½ or 1 teaspoon of chilli flakes

  • 1 teaspoon each of ground cumin and ground turmeric

  • 1½ tablespoons of honey

  • 3 tablespoons of soy sauce (*)

  • 100g of peanut butter
    400g tin of coconut milk

Method

  • You can crush the garlic and finely dice the ginger but I just put it all in a little chopper and chop it with the dry spices thrown in to blend them.


  • Slice the onion and fry it and add the garlic, ginger and spices soon enough so they are cooked.

Then in this order -


  • Add the soy sauce - I have used both light and dark - this is a matter of taste but if you are "souping it up with an added sauce I recommend using light.)Add the honey
    Add the peanut butter and let it soften. Pour in the coconut milk and stir. Let it cook on low for 20 mins remembering to stir so it doesn't stick to the bottom of the pan.

  • Add black pepper to taste - the soy sauce should be salty enough.

Feel free to use more or less of each ingredient as you get familiar with the recipe - its very easy. I recently added a delish Tamarind Marinade to the sauce after cooking it and it gave a delicious depth to the flavour - I started with a heaped teaspoon and added a bit more according to taste.
