Sun dried tomatoes are great to have to hand for things like bruschetta or in your pasta dishes whether its a dinner or a salad. Obviously all of these types of foods are improved with careful addition of garlic and herbs etc but there is a time saver that can make life a lot easier!
When you buy a jar of sun-dried tomatoes either have a couple of jars like the one pictured above or just a second jar to split the contents of the tomatoes between. to each jar add several cloves of garlic and either some oregano or thyme - you will need to add more oil so feel free to use either plain or a bit of chilli oil to give them a kick! Keep them in the fridge and they will be delicious in light lunches or your pasta dishes or in tarts.
