Marinated Feta
A winner to have in your fridge through the summer - try to have a jar handy at all times.
This is great in wraps or flatbreads, with hummus or falafels or in couscous and even pasta dishes. Another serving suggestion is to serve it on your potatoes. Yummy.
Just get a regular block of Feta and chop it up into pieces like small dice - a standard block from Lidl or Aldi will do enough for about 6 people.
Take a jar and pour in some olive oil and pop in some slices of garlic. Then add in some of your feta and sprinkle in some ground black pepper (or mixed peppercorns), chilli flakes and some oregano or thyme (or both). Add the rest of your feta gradually with a bit of oil and more of the herbs, spices and garlic each time.
Set this aside to marinade and turn over the jar from time to time to stop everything from settling.
When serving you can use the oil too if you like in couscous or add it to your salad dressing.
